In May 2026, Wild Nectar, a fresh-pressed juice bar and coastal kitchen serving nutrient-rich bowls, salads, and bright modern flavors, opened at Airstream Row under owners Kolbi Amos and Hayden Shaw. If you live in Seaside or drive 30A every week, you already know the row. What you may not have registered is how deliberately it keeps changing.

The thesis of this post is simple. Airstream Row is not a static curiosity. It is Seaside's rotating test kitchen. The trailers stay put. The operators inside them cycle, evolve, and cross-pollinate with the town's brick-and-mortar restaurants in ways that keep the Central Square food scene from ever quite settling. Wild Nectar is the newest proof.

The Newest Trailer

Amos and Shaw are not strangers to the town. They describe East Pass Coffee as a home away from home for them and their guests, and Wild Nectar is a natural extension of that same audience: residents who want a fast, fresh weekday breakfast without leaving the walkable core.

The menu is more ambitious than the trailer footprint suggests. The Mojo Chicken Cubano layers pulled mojo chicken, salt and vinegar chips, provolone, pickles, cilantro, and mojo dijonnaise on pressed Cuban bread; the Avo Fancy Toast is avocado on locally sourced sourdough with cherry tomato, lemon, olive oil, and cracked salt and pepper; the Classic Parfait pairs vanilla Greek yogurt with strawberries and granola, and there is a Kiddos menu with a mini açaí bowl and smoothie. The Build-A-Bowl lets guests pick any five toppings from a list that includes kiwi, cacao nibs, chia seed, chocolate chips, and flax. That last detail matters because it tells you what kind of trailer this is: not a novelty stop for tourists, but a build-your-own weekday habit for people who eat here more than once a week.

Why the Model Keeps Working

To understand why Airstream Row absorbs new operators without losing its character, you have to go back to how it started. In the mid-1990s, Case Cooper faced closing his snack business, Frost Bites, because Seaside retail space was limited and costly. He set up shop in a vintage Airstream instead, and other entrepreneurs followed, turning the strip between the half-moon-shaped town square and 30A into what became known as Airstream Row.

That accident is now the design. As Seaside founder Robert Davis put it, "The Airstreams are fun and funky and the size of the place means the proprietors keep it simple." A trailer footprint forces a focused menu. A focused menu lets an operator run tight food cost and staffing. Tight economics let a new concept like Wild Nectar test itself against real weeknight demand without the capital exposure of a Central Square lease.

The result of that arrangement is visible in who owns what. In 2021, the Beechers partnered with Courtney and Baron Fields to purchase The Dawson Group, a collection of Seaside restaurants founded by Bill Dawson, including Wild Bill's Beach Dogs, Pickle's, Shrimp Shack, Dawson's Yogurt, and It's Heavenly. A single trailer became a portfolio of Central Square institutions. Airstream Row is where that pipeline begins.

A few details on the table are worth pulling out. Frost Bites offers more than 30 individual shaved-ice flavors plus 60 combinations, along with configurations of shaved ice, frozen custard, and cream sauce, and the house move is the Piggly Wiggly, frozen custard on the bottom with shaved ice on top, what they call stuffed shaved ice. Wild Bill's builds its dogs on grass-fed American Wagyu all-beef franks and Rotella New England-style buns, topped with roasted veggies and drizzled sauces. Gyro Hero was a favorite at the local farmers market before opening its vintage Airstream in 2020, which is the exact migration path Wild Nectar's owners are betting on in reverse: proven brand at East Pass Coffee, second act on the row.

How Residents Actually Use It

If you are visiting for the first time, the row reads as a food court. If you live here, it functions as three different amenities layered in the same 100 feet of pavement.

The first layer is the morning routine. Wild Nectar's opening changes the calculus of a Seaside breakfast. Before May, the walkable options in the core skewed sit-down or coffee-only. A five-topping bowl at a trailer window is a different category, and it is a five-minute walk from most WaterColor and Seaside cottages.

The second is the amphitheater rhythm. Airstream Row sits at the heart of Seaside, walkable from the beach, the Seaside Amphitheater, and all of the shops and restaurants. Concerts and films on the green pull residents to Central Square with no dinner plan. The trailers are the answer to that, and the seven-way choice is the point.

The third is Saturday. Before there were many markets in the area, farmers sold their goods every Saturday at Central Square, a tradition that continues today, with boutiques and restaurants lining one side of the open-air theater and the customized Airstream food trucks lining the other on what is affectionately known as Airstream Row or Land Yacht District. The market and the row are the same event for most residents. Coffee and a bowl at Wild Nectar, produce two trailers over, then Modica Market for the pantry gap you did not fill.

Speaking of which. Modica Market has served the town of Seaside for over 15 years, and it is 100 yards from the row. That combination, a locally owned market next to a rotating trailer lineup and a Saturday farmers market, is why Seaside works for full-time residents the way most 30A destinations do not.

  • Wild Nectar's Mojo Chicken Cubano. The newest sandwich in Seaside, and the fastest way to see what the trailer is trying to do.
  • Frost Bites' Piggly Wiggly. The custard-under-shaved-ice combo that predates most of the row and still explains why Case Cooper's original bet worked.
  • Wild Bill's with a side visit to Great Southern Café. Jim Shirley's Great Southern Café is the only local spot where you can sample his famous "Grits a Ya Ya", and it sits a short walk from the row for anyone who wants to trace the trailer-to-brick-and-mortar arc in a single afternoon.

The Real Story of the Row

The reason Airstream Row keeps working is not nostalgia and it is not the food, though both are real. It is that Seaside built a place where a new concept can prove itself in six months instead of six years. That mechanism is why residents who have lived here for a decade still find something new on the town green, and it is why a home in the Seaside core, or in an adjoining 30A community with easy access to Central Square, holds its texture instead of aging into a museum piece.
